Finishing and presentation

Ingredients :
344 g – Almonds, raw, ground
304 g – Icing sugar
400 g – Egg white
160 g – Sugar
240 g – Croquant flakes, large
 
Advice :
The Chips you can do in different sizes for pastry or decorations.
 
Preparation :
1)      Whip up the egg white and sugar. Sift the almonds and icing sugar and fold in.
2)      Using a stencil, spread the mass onto a silpat. Cover with croquant flakes and bake.
