Ingredients :
Ladyfingers :
225 g - Egg yolk
85 g - Sugar
150 g - Egg white
75 g - Sugar
125 g - Flour
75 g - Starch
Syrup :
500 g - Water
250 g - Sugar
125 g - Ice coffee Topping
150 g - Cognac
Tiramisu mass :
250 g - Tortina neutral
250 g - Milk
150 g - Cream, whipped
250 g - Mascarpone
15 g - Cognac
100 g - Cocoa powder
Preparation :
1 - Ladyfingers: Beat egg yolk and sugar. Beat egg white and sugar. Mix both and fold in the sieved starch. Spread the mixture on a silicon sheet and bake at 220°C.
2 - Syrup: Bring water and sugar to the boil, let it cool until 40°C and add cognac and Ice coffee topping.
3 - Put the ladyfingers into the mould and soak with the syrup.
4 - Tiramisu mixture: Beat up Tortina neutral and milk for 3 min. Mix the mascarpone, cream and cognac and add to the mixture.
5 - Composition: Spread the mascarpone mixture on the first layer of the ladyfingers. Apply second layer of ladyfingers and soak. Fill up with the rest of the mixture. Place to cool at 5°C.
6 - If desired cut into slices and dust with cocoa powder.

Can also be prepared with white chocolate mousse
